Banana,It's hard to say what could have caused the deflation...lots of reasons. Some deflation is normal, but when it deflates too much... it is not good. I can only guess what could have gone wrong.... over mixing can cause deflation. Care is needed to fold the egg whites gently... But it seems like you got some height ... so I am not sure.But when you remove the cake from the oven, sometimes a change in temperature (hot oven to cool room) can cause the cake to deflate. You may want to leave the cake to cool in oven with door ajar, about 30mins to 1 hour because the sudden change in temperature may cause the cake to cool too quickly and collapse.Hope... that helps a. Turn off the oven and let the door ajar for minutes to prevent the cheesecake from shrinking.b. Remove pans from oven and let cool completely.c. Chill in a fridge for about 2-3 hours.
